Pumpkin Spice Shakeology

It’s that time of year…when everyone starts to— put up Fall decor, post pictures of the beautiful leaves and their kids jumping through them, share crockpot recipes, show off their new boot/skinnyjeans/scarf combo. I love the Fall, I really do. It’s the only time of year I miss being back home. I try to get into the “mood” as much as I can but there is something about 99.7% humidity and 85 degree temps that scream “This is not like Rochester!!”. So every year, I pull out the few decorations I have, light a cinnamon spice candle, and think about the cooler temps. When I get bummed about it, I remind myself that in about 2 weeks time, those same people will be posting pics about how they absolutely CAN NOT believe that winter is here again and that they had to scrape ice from their windshields. And let’s face it, if I was in Rochester still, I would be making the same posts. As much as I miss the Fall, I just don’t think I could ever survive a winter again.

Anyway, as much as I love everything about the season, I really, really, REALLY love pumpkin. I decided to try adding it to my Shakeology and I believe I created something wonderfully delicious.

Pumpkin Spice Shakeology

1/2 scoop chocolate shakeology

1/2 scoop vanilla shakeology

8oz unsweetened almond milk

6oz of water

1-2 heaping tblsp pumpkin puree

1/4 tsp pumpkin pie spice

1/2 tsp cinnamon

Add ice and all ingredients to the blender. Blend and enjoy! Happy Fall everyone!!

Avocado Chicken Burgers

When I say that these are the best chicken burgers I have EVER made, I am not exaggerating. My husband (who has been so good and patient as I try out new recipes) even said, “Reg, these are the most amazing burgers you have ever made.” We think it was the avocado. Guess who else loved them…BOTH kids.  The little guy eats everything so I wasn’t surprised but my daughter does NOT like avocado.  After she ate the burger, I told her what was in it and she just laughed at me.

Avocado Chicken Burgers {made 5 medium sized patties}

1/2 lb ground chicken

1 avocado, cut into cubes

1/2 cup bread crumbs {I toasted some whole grain bread and made my own}

1 clove of garlic, grated

1/4 tsp ground cumin

juice from half a lime

1 tblsp of fresh chopped cilantro

salt and pepper to taste

 

Mix breadcrumbs, cumin, and salt and pepper in a bowl.  Add in ground chicken, garlic, lime juice, and fresh cilantro.  Mix well.  Fold in avocado cubes, be careful not to over mix!

Heat grill and cook over medium heat until done–about 5-7 minutes per side. Serve on a bun or over a huge salad.

P90 Workout

P90 is the on switch to fitness. That’s straight from Tony Horton himself. I am beyond pumped for this workout to be released. Have you heard of P90X before? If you are anything like me, you might even own it and you might have even tried to do it. Not going to lie here, I gave P90X minimal effort. I did the workouts I liked, skipped the ones I didn’t, and then it sat on my shelf and collected dust. Sorry, Tony, it’s the truth! Well let me tell you…a lot has changed in the fitness world since P90X. I completed P90X3 (you can check out my transformation story here). And that’s why I am so excited for P90.

SO WHO SHOULD TRY P90?

P90 could be the perfect workout for you if you:

– don’t want a hardcore workout but you want to lose weight.

– want to get back some of the muscle tone you have lost over the years.

– want to be healthy and fit but you are not sure where to start.
