Chicken for Dinner and Lunch, Too!

If you love your dinner, why not have it for lunch?  Well some people just don’t like leftovers.  I’m not gonna lie.  I haven’t always been a big fan of anything reheated other than soups and pizza.  I have learned that there are certain foods I can make and take advantage of saving some time and prep by using it in other meals during the week.  Last week, I made figure friendly chicken cutlets.  Take thinly sliced chicken breasts, dip them in a beaten egg, and then dip in seasoned breadcrumbs. Place on a foil lined baking sheet and bake at 350°F until golden brown and juices run clear.  We had a salad on the side and there were even a few cutlets leftover.

So I made this sandwich the next day…and the day after that too!

I took one of those thin deli bread rounds and dressed one side with Dijon mustard and a drizzle of honey.  Throw on the chicken cutlet, romaine lettuce, sliced tomatoes, and avocados for a pretty tasty (and guilt free) lunch!

What’s All the Fuss About Colic?

There are many theories behind colic.  Some believe it’s caused by an upset tummy.  Some relate it to a baby’s underdeveloped nervous system.  Some even say that it is unexplainable. Either way, if you are a new mom and your baby cries for an extended period of time, every day, you begin to wonder about what you need to do to help.
Sienna wasn’t very fussy when we first brought her home from the hospital and all she really did was eat, sleep, and poop. I thought that I could definitely get used to this life and waking up every two hours at night wasn’t so bad. Two weeks later she began to cry.  It was a cry that had me believing that my mother’s wish of “I hope you have a daughter just like you!” was already coming true.  No baby class could have prepared me mentally and physically for this.  We swaddled, we “shhhhed”, we ran the water, we bounced on yoga balls, we swung, we marched her up and down the stairs, we used the blow dryer, we held her in the bathroom with the sound of the fan on overhead.  My husband did squats while holding her because he wanted to get in a workout and it helped her calm down.  We found ourselves looking forward to the six week mark when researchers claimed that there was a light at the end of the “witching hour tunnel”.
Some nights were worse than others and what got me through it was knowing that we weren’t alone.  Books have been written to help parents prevent and cope with this uneasy time in a baby’s life (thank you, The Happiest Baby on the Block!).  Millions of mini gas drop bottles have been sold and colic-cures found on the shelves of almost every major market are the new liquid gold.
So tell me, what helped you get through those long evenings and groggy nights?   Let’s share what worked for us.  By the way, the bathroom fan and running water did the trick.  Now she has an obsession with all water faucets in the house.  I kid you not!
