I love to cook! I can remember watching my mom make hundreds of meals growing up and I couldn’t wait until I could have free reign in the kitchen. Having a baby definitely makes it more difficult to do all the cooking I used to do but I am slowly finding myself back in the kitchen (with a little help from our FisherPrice bouncer—see “Love It!”) I hope to share some of my own recipes with you but it will take time because I never really follow one. Maybe it’s an Italian thing! For now, here’s one from the web. Yum!
Guacamole

“Cilantro and cayenne give this tasty guacamole a kick. Makes four servings.”
Ingredients:
3 avocados – peeled, pitted, and mashed
1 lime, juiced
1 teaspoon salt
1/2 cup diced onion

3 tablespoons chopped fresh cilantro
2 roma (plum) tomatoes, diced
1 teaspoon minced garlic
1 pinch ground cayenne pepper (optional)

Directions:
1. | In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately. |
